Our Story

El Queso Chueco isn't just a project—it's a passion that emerged during the pandemic with a clear mission: to craft exceptional aged cheeses, rooted in the rich traditions of European cheesemaking. We are dedicated to an artisanal approach, honoring the time-tested methods and recipes that have defined the art of cheese over the centuries.

Our cheeses pay homage to the diversity and richness of classic European varieties like Camembert, Butterkäse, Gruyère, and English Cheddar. Yet, they offer something more—melding tradition with a unique twist, thanks to the distinctive flavors of milk from the Galápagos. This unique quality inspires the names of our cheeses, each reflecting the place of their creation: Media Luna, Los Gemelos, Leon Dormido, Cerro Dragon, El Puntudo, and Corona del Diablo. Beond our cheeses, we also produce traditional Greek yogurt, naturally flavored Greek yogurt, and quark.
